In a small area measuring less than 6 square centimeters, located at the back of the nasal cavity, there are thousands of tiny hairs called cilia. They are located in a dead-end space where a thin layer of mucus covers the olfactory membrane. When we breathe, air is drawn into this area of the nose and odor molecules dissolve in the mucus. Just as we can only taste substances that dissolve in the secretions of the mouth, we can only smell molecules that dissolve in the moisture of the nasal membrane.

The cilia are composed of thousands of tightly packed cells with specialized chemical receptors for odors. When the cilia send nerve signals to the receptors, the receptors in turn transmit the signals to the brain via the olfactory area.

Beyond this point, the chemistry and physics of smell are not yet fully understood. One theory suggests that each cilium recognizes only one specific odor. Another theory posits that certain cilia can identify a small group of “fundamental odors,” much like the eye perceives “fundamental colors.” The brain would then combine these “fundamental odors” to form thousands of different odors.

It is assumed that a specific odor molecule binds to a specific receptor, much like a round peg fits into a round hole.
